No you shouldn't aim for 1,000 calories 1,200 is the lowest you should go. And honestly 1200 calories isn't even the best oftentimes as well. What's your current weight and height?

So you've lost 2 pounds was that within a week? 2? I think this will help us figure out your question. I highly doubt you're burning 400-600 calories riding on a bike for 30 minutes. I'm 5'2, and I workout frequently as well.

You're eating more calories than you think honestly. Buy a food scale if you want, and since you don't have much to lose set your loss rate on MyFitnessPal to lose 0.5- 1 pound a week and eat the calories suggested it will be more than 1200-1400 calories I believe, and eat back at lest half of your workout burned calories.…

It really depends on the store or brand. Some stores are true to size in pants, and some brands are a bit more loose, and some run small.

Honestly, food labels can underestimate by 20%, so you could be eating more calories than you think. Do you use a food scale to measure your food? What matters is calories if you don't have a food scale buy one, and start tracking your food intake. Eat the calories that MyFitnessPal tells you. Good luck!
