Yeah, I haven't found a safe veggie broth yet either. There's just one that I can use in a pinch, but it's not great for me and my allergic friend can't have it, so I generally don't. Luckily veggie brother is easy to make, or else you can use water and punch it up by adding celery, onion, and salt to the recipe.

I took a quinoa salad, egg salad for my boys, coleslaw, and split pea soup. And peanut butter balls for dessert. Other things that were there that I could eat were a fruit salad, a green salad with strawberries, raspberries, and cashews, oranges, and black bean brownies.

Celiac disease is a malabsorption disorder. So Vitamin D, B12, iron, etc. can all be problematic. Combine that with a northern climate, and it can be hard to get enough Vitamin D.

It is possible to have a restricted diet and still be happy and satisfied with it. I love to eat, and enjoy coming up with new things that I can eat within my restrictions. I don't have any trouble meeting my calorie requirements with lots of delicious food!
