I'll try this no matter what it is called. I'll brush with a little olive oil and sprinkle with Montreal Seasoning. It sounds similar to oven baked brussel sprouts. Thanks.

In a small cast iron skillet, add 1 slice of bread cubed, 1/4 C egg beaters, 1/4 C chopped tomatoes, 1 C chopped fresh spinach, 2 TBS of shredded cheese 1/2 C of coconut milk, dash of Cajun seasoning, garlic powder, onion powder and Nature seasoning. Place skillet in 375 degree oven for about 15 - 20 mins.

1 C dried oatmeal, 2 C water, 2 TBS chopped walnuts, 1/4 tsp cinnamon, 1 pkg Stevia, 1/2 red delicious apple chopped. I cook all together and divide in two. Eat one and refrig the other for next day. I top this with a 1/4 C of coconut milk. Yummy.

It is not mandatory to post a pic of yourself, before, after, as is, then, now or whatever.... Many on MFP post eyes, leg, cats, dogs, arms, lips, you name it. I do think we want the woohoo factor to see before and after pics but who cares. Weight of is weight off. Congrats on you weight loss.

Most mornings, it is a smoothie made from choc flavored Lean1, cup of kale and 1/4 C of blue berries. Blend with 1/2 C of ff milk and 8 ice cubes. I use either coconut oil or olive oil in all the cooking that requires fat. No other fat except butter which I use sparingly is on my grocery list.
