I got this one expecting to hate it (as I've hated every other scale I've bought). But it turns out to be accurate (at least, to itself) and consistent. Super easy to read, too. And it came with multiple avenues of support, including an email from the Amazon vendor should I need any help, which I haven't.

I have a sit/stand desk, and take a few minutes every day to walk the stairs (my work building is 5 floors). Just like everything else, if we want the results, we make the time.

I eat (mostly) the same things every weekday, and whatever I want on the weekends. This allows me to only count calories once every few months (just when I change things up a little). I'm still meeting my goals.

This. Unless you're one of the X-men and your superpower is defying physics, your numbers are off. Nothing we do is exact. If it's not working, you tweak it until it works (eat less, stop eating back exercise cals, weigh more carefully, etc.) Are you counting all your liquid calories?

Ridiculous. Many vegetables are full of nitrates, and even if nitrates were only found in lunchmeat, the science is still out on whether they're actually bad for you, and there's evidence that some can be good for you.

Truth. OP says there was no lifestyle change, when clearly there was. Small changes over a long time is a lifestyle change.

My cheat "day" starts Friday night and lasts until Monday morning. I keep my weekday calories very low so that I can eat whatever I want on weekends. Mostly that means beer.

Eat less, lose weight. Eat more, gain weight. You can't change physics. Others will tell you that this isn't the case based on their own anecdata, but there is no science behind them.

It's not the "diet"; it's the person. Anything that restricts calories can succeed, but there's no point in trying if it's not part of a lifestyle change. And many (most?) people aren't willing to change their lifestyle.

Every diet work the same way: by limiting your calories. If you eat 1400 religiously and it doesn't work for you after 4-6 weeks, cut back a little and give it another 4-6 weeks. But I'd be willing to bet that 1400-1500 is pretty close to what you need, especially with going to the gym frequently.
