Microtrauma from little tears in the muscle fibers - water is one of the things the body uses to heal and repair. I can be 2 lbs heavier the day after I teach a Spin class or lift. And then it's gone.

If you are exercising you will eat more than 1200/day. You are supposed to net to 1200 per day. If you are a really active person you will find this may not be enough food for you some days.
