Yep. Eating over by 600 calories is more than likely just a maintenance day - nothing lost, but nothing gained either. The only failure is if you let it send you into a spiral of despair and binging.

I don't think anyone's metabolism can adjust downward enough to reach equilibrium at 800 calories a day, so you probably won't plateau. But don't kid yourself, you're doing damage to your body.

Common sense would tell me that you shouldn't really go out of your way to exercise on your fasting days, and if exercise can't be avoided then to bump your fasting day to different, more sedentary day. See a doctor. Amenorrhea (loss of menstruation) can have many causes and no one here can diagnose you over the internet. Be sure and discuss your eating habits with him or her as well.

Are you weighing and measuring everything you eat, or just estimating? There are a lot of days where you eat very small portions of particular foods - 1.5 oz of meat, 1/4 cup of ice cream, 0.4 of an english muffin (?) etc. - and I'm wondering if you're just eyeballing.

It sounds like you're doing it right. How long have you been doing it? How much weight have you lost in that time? Do you weigh/measure and log everything you eat and drink so you're absolutely sure about the calories?
