I also made a similar breakfast. Egg "muffins". Heat oven to 350, lightly spray a muffin pan with cooking spray. Beat 12 eggs in a bowl and add in whatever veggies you like. I used tomatoes, onions and spinach. Pour evenly into the muffin cups and bake 25 min. I plan on eating two at a time for breakfast. Very quick to…
