You can lose fat on your thighs (body) by caloric deficit. You can lose muscle by not using them. That said, I have never known anyone who wanted to lose muscle. Lose fat and you will look leaner.

Chocolate milk is just giving you sugar - I will never understand how this became a go-to recovery drink. You should eat a slow digesting carb like oatmeal as well as some fruit for quick carbs.

injury comes from accidents and bad form, not caloric deficit. He may not be able to adequately recover, and his training will suffer, but I don't see how that relates to injury. I eat at a large deficit and lift heavy 3x a week, and I am old too. Been just fine for a long time, and I have lost fat and maintained muscle.

I don't know why people think you can just pig out on keto and lose weight. You still have to eat under your TDEE in order to burn fat.

Depends on your level. 5/3/1 is good but you might be able to progress faster with a more linear program like stronglifts or starting strength. If you have plateaued then 5/3/1 or another 5x5 variant may be good, I currently use Madcow 5x5.
