Get a food scale and some good measuring cups to ensure you are logging properly. Weight all food and only use the measuring cups/spoons for liquids. 1,200 calories could be far too low for you. Do you exercise? If you do, do you eat some of those calories back?

Yes, water is the best and very good for you but, things like diet pop/coffee/tea/etc still hydrate your body!

I have smoothies because I get in produce that I wouldn't normally eat. I hate spinach (unless I make spinach chips) so I always throw a few cups into a smoothie with fruit and almond/soy/cashew milk. It helps me get the iron that I otherwise lack in my diet.

You may need to look at your routine and change some things. Weight gain can happen for a variety of reasons. You will not be experiencing muscle gains... you need much more calories than you are currently consuming. I would bet you are experiencing water weight gain

Weight will change day to day, even hour to hour. If those fluctuations discourage you, don't weigh yourself everyday. Weigh yourself once a week. Weight loss isn't linear; it won't go down each time you step on the scale.

I personally use Almond or soy milk. My daughter drinks Rice milk. I don't have issues with soy so I am fine using things like faux cheese and things like Tofutti. Be careful as milk is in almost every packaged item!

My days are from when I wake up to when I go to bed, regardless of what the time is. I don't think it really matters as long as it is logged somewhere.

You would add that in as exercise for each day that you do it. Calories would depend on your stats like height, weight and whether you are male or female. You can add exercise just like you would food. Your activity level is for your day to day with no extra, planned exercise.

I have no problems cleaning mine. I use a brush though to clean the mesh basket part. Under running water I lightly scrub one side with the brush, than the other. Simple and quick!

I use one from Amazon... NuGreens I think it is. Another thing to do would be to make smoothies. Blend handfuls of spinach and such with some fruit and either water or milk. You can't taste the veggies!

Are you eating your exercise calories back? Are you properly measuring (as in weighing) your food to ensure you are logging correctly? What is your sodium intake like? I would get some blood work done and check your blood pressure. You could be anemic, have high/low blood pressure, etc.

Caramel coffee with milk would have less... it is flavoured water with a bit of milk. A latte is all milk with a tiny bit of flavoured water and usually will have a few flavour shots

Weight can fluctuate based on many things. Hormones, diet, salt intake, water intake, etc. With the sound of how active you are, 1,200 probably is not nearly enough calories either.
