I agree with either the PBfit or PB2 option. There are some nice vegan protein powders out there - vega protein and greens in a good one. Tofu is a great suggestion as well.

It would depend on the type and amount of things you are eating. With a higher fiber intake you need to make sure you are also intaking enough water. You will get the hang of weighing really quickly. It may seem a bit tedious at first but just know that it will really help clear up discrepancies with food intake.
