OK, I've made it twice since posting. My experience: 1:2 ratio with the lid off; needed a stir and a couple extra minutes of cook time. 2:3 ratio with the lid on; removed from heat, took off lid, fluffed with a fork and let sit for 5 minutes. Both methods worked well.

If you like your syrup 'mapley', look for grade A or B Dark Amber. If you want less of the maple taste, look for grade A Light Amber. Also... I like to use agave in iced beverages - it's about the only sweetener that dissolves well in cold liquid.

I make a version with cottage cheese, for extra protein (see my recipes for 'oatmeal cottage cheese pancakes'). These are the best flour substitute pancakes i've been able to find. There is yet another version out there that uses 1 banana and only half of the cottage cheese, and the ingredients are the same otherwise.

I think you can spare a few hundred more and still lose quickly. And this ^ It took me a few weeks to wrap my head around that one. Now I don't stress that my diet is blown if I go over by a hundred calories; I just understand that the loss will be a little slower.

Use what you like! If it's 'refined' sugar you're worried about try honey, maple or agave. I love honey in my coffee but it is, of course, still sugar. In the Raw brand also has a sugar refined from monkfruit... has anyone tried this/know the deal?

I take my tea plain, but I do log the whole milk that goes into my coffee. Since it's a liquid I just use a measuring tablespoon, not the scale. Two tablespoons = 1 fluid oz, which is what I use per cup.

Glad I wasn't too far off the mark :) This gooey brew is definitely going into my veggie rotation. I'll definitely give the corn a try once it's in season here. I'm jealous - anything fresh out of the garden tastes better than store bought! I just filled up my small plot with tomatoes, kale, peppers, spinach and herbs.

I dig it, but no love for lime juice? I think it's crucial for the right tang... Also, try subbing tomatillos for tomato when they're in season. It's a nice change!

To get the "gut" benefits, the 'kraut must be fermented; commercial jarred brands do not support probiotic life. I'm not sure where you live, but in my geographic area the real fermented stuff is harder to come by and pricier. Just read your labels!
