This is my gym time: 30 mins running on treadmill, then weights. hen my sets are finished I end with 30 mins on the elliptical. Both seem to burn the same amount of cals

Your calorie intake seems to be very low. Did you originally set your profile to sedentary? Because I'm a 5'4" 190lb female and my cal intake for the day is at 1650. It may seem counterintuitive but increase your food intake a tiny bit. Your body might be starving and holding on to every morsel.

I was put on Met for my PCOS. It's more like what you should stay away from if you don't want the side effects. So anything greasy, high in sugar or fat is gonna keep ya in the toilet for quite a while. So besides those you're good to go :)

Switch up your macros a bit. If I ate the amount of carbs you do I'd always be aggressively hungry. See if your body is more contented with more protein or fats and less carbs.

Been a runner all my life. Moved from being a sprinter to a distance runner in my early 20s. I remember stupid statistics. Like I don't even know how I know something and then a random stat would pop up. Like when I was coming out of anesthesia after surgery it seems I was giving a lecture on systolic and diastolic pressure to the nurses. My family says it creeped them out lol

Rolling with a regular tennis ball is good but I bought one of those spiky massage balls on Amazon and it really gets into the places where the pain is the most and relieves it.
