My favorite way is in a crock pot. I marinade a salmon steak in zesty Italian dressing. then you put it in a crock pot with a chopped onion and a chopped yellow red and orange pepper. Add salt, pepper, the juice of a lemon, and half a can of beer. cook on high for 3-4 hours. It is great served with rice or quinoa.

We love roasted veggie and quinoa salad. Cut up an onion, sweet potato, cauliflower, brussel sprouts, carrots, and beets. Toss them in some olive oil and soy sauce until evenly coated. Bake them on a cookie sheet until tender. While baking, cook quinoa in veggie broth. Combine everything in a bowl.

I would say those huge silver disposable tins for casseroles and maybe crock pots would help. I would also prep as much as possible at home and put things in gallon sized zip lock bags to just cook up later.
