I log the good days and the bad days. It's a diary I can review every so often to see what works. Maybe I'll see that I eat more when I feel sad. Then I decide to take a different tack. Maybe when I feel upset, I'll put on my walking shoes and take a walk for 30 minutes. That's a half hour of not snacking. Win!

I don't think you're ready for skin removal. Just my opinion. I will say that the weekend junk food leading to an 8 pound bloat is probably due to salt retention, which I am guessing flushes away in a day or two. Be sure to drink a bunch of water during the weekend and you should be able to keep that bloat down to 3 pounds!

Keep at it. Maybe your logging isn't as accurate as you think it is. Buy a food scale (pretty inexpensive) and start weighing your portions. Drink more water. Take a walk. Eat back 50% of the calories you earn by exercising. You may see progress over the next two weeks. Keep at it!

Add in some higher calorie snacks. An ounce of cheese, a small handful of almonds, half an avocado, etc. You'll be more likely to hit your net calorie goal and you won't feel overly full.

I always used my Garmin for keeping track of steps walked or run or Zumba'd. Then I'd check MFP for calories burned for those activities. For Apple Watch at least, you can search "how to calibrate Apple Watch for calorie burn" and there are websites that walk you through it.
