Pretty much anything can lead to an eating disorder if you're inclined to have one. People who struggle with control issues or negative body image going vegan would be more likely to develop one than a perfectly happy and confident person.

If all you did was overeat to deal with the stress, that's really not that bad. I probably would have been in the fetal position next to the toilet drinking wine and taking bites out of a block of cheese. Try putting vegetables in stir fries, soups, or on a sandwich. You'll probably never love them, and won't be able to eat all of them, but you can easily increase the amount you eat by cooking them in ways that taste better. I'm not a huge veggie person myself but now eat a lot more than I ever thought I would.

I refrigerate, but only because I go through butter so slowly. I eat it on toast once in awhile and it takes me six months to get through a tub of whipped butter. And I only use sticks for baking so may as well keep them in the fridge as many recipes call for cold butter.

I used the Land O Lakes whipped butter. Still butter, more air and water mixed in.

Eat foods that are higher in calories. If you've maintained at 123 lbs for years then you have to have been eating more than 1000 calories a day.

You should definitely make an appointment with your doctor, and potentially ask them to refer you to a nutritionist to really help out.
