Sweet potato roll is my favorite. They often will have vegetable godzilla rolls which have sweet potato, avocado, cream cheese and other stuff. Otherwise I really like Avocado and Kappa (cucumber) maki. If if they have pickled gourd or pickled plum rolls, I recommend those as well.

Overall I would agree that it feels way better to be eating healthy. I'm back on the bandwagon this week and my body feels pretty happy about it. There's still exceptions when I eat deliciously fatty and greasy and sugary foods, but not eating those exclusively makes a big difference in my energy levels.

You don't really have any way to tell which scale is more accurate. So choose the most convenient one (I would say your home scale), get a new starting weight tomorrow morning and work from there. Work on gaining muscle and strength training. You may always have cellulite but if you lower your body fat percentage and increase muscle it will probably look better.

I often don't work out on my period. If it isn't heavy enough for a tampon the big bulky pad gets sweaty and is really uncomfortable, not to mention the fatigue. However, try doing whatever you feel physically capable of. And exercise is supposed to help with cramps (so they say).

I suggest you look at the nutrition label instead of listening to what "some people" tell you. Compare regular and skim with optional substitutes, and see which fits better into your diet. And take into account what you actually like, because sometimes a few extra calories is worth it.

Make your best estimate and eat sensibly. A difference of a couple hundred calories isn't going to ruin your life. What WILL ruin your life is hauling your food scale everywhere.

Sugar free Jello (if you can tolerate it) has been a good choice for me since I can pig out on it for like 60 calories a box. I generally try to skip artificial sweeteners because I don't like the taste but most of the time it's acceptable in Jell-o.

Make sure that your shoes fit right. Stretch and ice those sons of guns and it should go away. Ibuprofen will also help with pain and inflammation. Have you rested at all or are you still running every day?
