I don't get disheartened at all. I weigh every day in the morning, and I watch my weight go up a pound or two over the week just before my period, then 2 or 3 days in, BAM, I've lost it plus some extra. Feels good man.

Add fat to your meals - olive oil, coconut oil, avocados, nuts, natural peanut butter, etc. Since fat is 9 calories a gram, it's a lot easier to meet caloric goals if you add it in.

Fauxtatoes instead of mashed potatoes. Just sub potatoes with boiled then pureed cauliflower, add butter and a bit of cream cheese, and you have an amazing dish. Don't tell anyone and they'll all think it's the best mashed potaotes they've ever had.

If you switch out the soy milk out for say, unsweetened almond milk, which has no sugar, that would help. Otherwise most of it's coming from fruits, so yeah, don't be overly concerned.

I just rant at people. It was the worst the night before halloween because my PMS was at its height and I was in a house full of delicious homemade pizza and my favorite cupcakes. You realize that subway can do a bunless sandwich. It cuts out a ton of calories, and you don't have to waste food by throwing the bun away. It's called a salad because they replace the bun with a bed of lettuce, but it's still the same everything else. :P
