If she is, as you say, "very fit", she is likely okay with not counting those calories, because she's doing better at listening to her body (even subconsciously), and not overeating. So, somewhere her brain is 'logging' them, even if it's not exact down to the calorie. If you're just starting out, log them. Every. Time.

So many ways. I love it with frozen blueberries. It's also great with chopped tomato, and some Jane's Crazy Mixed-Up Salt. It's *awesome* as a topping for a baked potato, with some salt and pepper....makes those bland suckers palatable.

Not true! The best thing for sore, stiff muscles is to get them moving again. Attack that second day! Maybe you won't be able to hit it *quite* as hard as the previous day, but getting yourself into that daily exercise habit is more important. Tone down the intensity if you must, but DO IT.
