Quick and simple....make small slit in the middle of the breast. Stuff with spinach, shrooms and some cheese. Roll in bread crumbs and bake in the oven on 350 degrees F for about 35 minutes. Have a veggie or a pasta side and you are good to go. You can even make a little sauce to go over or use one from a can.
