I try to stay under 100 grams a day. That allows enough for veggies and a small serving of bread or pasta at one meal If I hadn't already used it of sweet potatoes or something else.

It depends on how active I've been and how many calories I've eaten already, but I have no rule that says I can't eat right up until I go to sleep. Also, we seldom even eat dinner until 7 or 8 anyway.

No it isn't. If you're consistently eating 2000 calories a day and not gaining any weight, then your TDEE estimate is obviously too low. Assume that 2000 is your TDEE and work from there and you might have better luck.
