My SIL runs a lot of marathons. Usually after a race, she eats like a horse for 3-4 days and then her appetite normalizes again. It's probably just your body going "Whoa, that was hard! Should probably load up on calories in case we have to do it again tomorrow!"

Chicken Salad is my go-to for lunches. I make a giant bowl of it on Sunday night and eat it all week. I use recipes that call for greek yogurt instead of the mayo, or vinegar-based chicken salads. One of my absolute favorites is Chicken Salad with Apple and Basil from Real Simple magazine.

As long as you don't go over your calorie goal, you're good. You could literally eat your entire day's calories at 2 in the morning and then go back to sleep. As long as you don't go over for the day you're fine.

Correct. For example in my state, for workers over the age of 18, employers are not required to offer breaks. Many companies choose to offer breaks every 4 hours, but it's not a legal requirement.

I sauté mine with a tiny bit of olive oil in a hot pan. I don't have a spiralizer, so I just use our mandolin with the julienne blade installed. It works well, if you're interested in trying veggie noodles but not sure if you'll like them enough to justify buying another gadget.

I just use a regular water pitcher and throw some fruit in there. I find that I drink a lot more water when it has a little hint of flavor. My favorite is grapefruit slices, or frozen blueberries. I don't tend to log it, although I probably should.

With lifting, you'll feel the progress long before you see it in the mirror. There's just something about loading a heavy barbell with plates onto your shoulders or the first time you deadlift your own weight that makes you feel like a total bada$$. It really does so much for your confidence.

1.4 pounds along with a new exercise routine? Most people actually gain a little temporary water weight at first when increasing exercise. If you saw a scale decrease, you're definitely doing something right!

No. I work the foods I like into my regular calorie allowance. It would be easy for me to undo an entire week's worth of deficit if I wasn't counting my calories. A few times a year, I'll skip logging on a special occasion and just enjoy the day. Weddings, Thanksgiving, things like that.

What you're describing is kind of worrisome to me. Logging meals weeks in advance sounds obsessive. 7 pounds is really close to goal. Have you thought about switching to maintenance and doing a recomp? You wouldn't see a drop in scale weight, but your measurements would go down slowly over time.
