More than likely you're making Muscle to replace the fat (which weight more) So even if the scale doesn't move, your tummy will! I think you should keep the calories the same, until you stop losing inches. Otherwise your body'll might probably end up eating the new muscle!

5'7 and I'm aiming for 125-130 But I'm going to talk with my doctor about that once I get under the 200 mark. I'd say ask your doctor to see if it's heathly, but I think it'll look just fine ^^

I log everything I can, because, like you said I don't want to waste time logging something small So I'm more opt to eat something larger and more often, healthier

Especially with the weights, it could be muscle. I say just keep at it and be patient :3 And maybe what the previous poster said about not eating exercise calories. I know some people that works, some people they have to eat them all and some people can only eat half. You just need to find what works best for you.

Honestly, you should be logging everything, embarrassing or not. MFP can't tell if you're eating more than what you put into the system and therefore it's useless. I say yes, because I believe you're suppose to eat back those exercise calories. Other wise you'll eat like 1,200 and burn 1,300 And you're body won't have enough to function properly. I think that makes sense lol
