  • I can brew coffee, scramble eggs and reheat a sweet potato in under 5 minutes and I'm full until lunch. I can add in sausage without taking any mroe time. It used to take me that long to open a box of cereal and I'd be hungry again in an hour!
  • The biggest difference with coconut flour is that it takes a crazy amount of moisture for a seemingly small amount of flour. I have recipes that call for 1/2 c. coconut flour and 6 eggs for moisture and binding. It's a little tricky, but it's a great gluten-free baking alternative.

  • If I'm eating dairy, I usually find the nearest Whole Foods or other market and pick up whole fat plain Greek yogurt and kombucha. I either add fruit or bring chopped nuts and honey from home to top it. I've also eaten beef jerky for breakfast in a pinch!
