I've started using it in place of other cooking oils for cooking eggs or stir frys. I haven't noticed any difference in health, but I think it's a good, healthy oil to use. I also rub it on my hands and nails when I scrape the extra off the spoon too :-)

I actually don't think you would eat back exercise calories if you are going by TDEE. The number you got for your TDEE should have exercise built into it, so if you eat TDEE (minus the deficit to loose) plus exercise calories, you are really double dipping, if that makes sense. Yes, log it :-) I have started using coconut oil for frying eggs, sauteing vegetables and things like that. It doesn't take much and has a lot of good nutritional value. Pam would be okay too, but personally, I try to stay away from processed foods with tons of ingredients I don't recognize.
