Mornin' All, Nanc, great job keeping your goals front and center and planning accordingly. Both for retirement and eating for health. Slept in a little this morning and feeling kind of sluggish so no treadmill until this evening. I want to get to the office earlier today. Didn't go in until about 9:00 yesterday. One of my…

Nanc, when are you thinking about cutting back hours? That's exciting! Got up early and did a mile and a half on the treadmill. Making some rice and will steam some broccoli to take for lunch, then heading to the office. Will hit up Fresh Thyme on the way home to restock fresh veggies, potatoes, mushrooms, fruit.

Mornin' all, I have got a little better sleep the past couple nights so I've been able to get treadmill time in the morning. Glad to be back at that. It seems to help my mood and energy for the rest of the day. Bisky, it's a good thing you had already got a start on clearing things out since you are now moving sooner than…

That's very exciting news, Bisky! Yay! And your sister... ummmm... this is not the forum in which to use words I would like to use in response to her comment. Feeling mildly better about life in general. Nothing has changed and still stressed out, but trying not to let it get to me and remembering to do my mindful…

OMG, Nanc... sorry but that cracked me up you accidentally turned your smile green with a smoothie. How'd your food prep plan go today? Better day. Slept better last night. Just overwhelmed with work and not sure what to do to try to catch it all up! It's never-ending. B - oats with berries and almond milk yogurt, cinnamon…

Thinking of you today, Nanc. *hugs* I had a rough day. Didn't sleep well and was out of sorts, and everyone seemed to be going out of their way to irritate me. Decided to leave right at 5:00 and get a good night's sleep, start over again tomorrow with a (hopefully) better attitude. B - oats with berries, cinnamon,…

I was worn out yesterday and went to bed at 8:00 so I'm up and at 'em already. Have laundry going and will have breakfast, then get up to my desk. I'm sure a nap will happen at some point today. Might take a run out to the wholesale club for a few odds and ends but it could wait until next weekend. Need to pay bills today…

How'd your eggplant saute turn out, Sue? I love eggplant. Bisky, sorry to hear you aren't feeling well. Good idea to stay inside and take it a little easier until it cools off. I had asthma when I was younger, and while I pretty much outgrew it, I still have some trouble with humidity. Hi Charlie-Bear! I am heading to the…

Thanks for getting August started, Nanc! Glad to hear you are sleeping better. I left the office right at 5:00 tonight and I am going to bed SO early. I'm exhausted.

Spring, that job sounds like a lot of fun! Nanc, I am not sure I will ever get tired of broccoli but I tend to cycle through foods sometimes. Lately it's avocado and almond milk that I can't stand. I like banana in smoothies, but just a few slices of frozen banana. This week has been a blur. So busy and very stressed.…

Oh, and Bisky, I don't tend to crave sweets but once in a while (like maybe a couple times a year) I'll go through a stage where I want cookies or dark chocolate often. Then I find when I go back to fruit it doesn't taste as sweet for a while until my taste buds get back to normal. Weird how that works.

Great prep work, Nanc. Bisky, I'm going to make a tomato bake that is reminiscent of one my mom used to make when I was young. Tomatoes, basil, cubed ezekiel bread. I can leave out the oil and use nooch instead of parmesan. Hoping it will be as good as I remember, but nothing ever seems to taste quite like mom used to…

Oh geeze Coffee! Glad to hear you got to the ER. How are you feeling otherwise? I had forgotten about Dr. McD's stroke until I was reading some of the articles after he died. He overcame a lot! Nanc, how are things going at work these days? Did you finish all your organizing at home? Went out with a friend last night…

Thanks for the edamame noodles in the recipes, Sue! I saved that one, and just noticed Spring's chili recipe too. Those both sound really good and simple. I have everything on hand for the edamame so maybe I will make it tonight. Depends on when I get out of the office. I slept in a bit this morning and don't feel any rush…

Cute, Nanc! Are things settling down? How is Miss Lulu? Bisky, I always feel better when I do yoga consistently too. The consistency is the sticky part. Love the new bird bath! Sue, the edamame peanut rice noodle salad sounds delish. Recipe? I did have fun last night, although I had 2 glasses of wine instead of my usual…

Mile and a half on the treadmill done. Hoping to get through today without losing my mind then I will have all weekend to work on catching up. Meeting up with friends after work for a cocktail. Plan for today... same breakfast and lunch as I've been having. May just order a salad while I'm out tonight so I don't have to…

Glad you found the dips and enjoyed, Coffee. That's too bad about your co-worker. I might have gone to bed too early because I was up at 4 am. Got a mile and a half in on the treadmill with that extra time. Plan for today is pretty much same as yesterday. Yay for leftovers! I may try to cook something this weekend again,…

Sue, that scramble looks scrumptious! I have heard Nanc mention Sprouts and I think that may be similar to Fresh Thyme. Nanc, hope July is going better for you. I am feeling good, energetic and no lingering crud. Man, that sucked almost 3 weeks of being sick. Sleeping so much better which is probably half of feeling…

Coffee, that's awesome you went camping and feeling so well. Yay! Agreed about Fresh Thyme's produce. Sue, great tips! I tend not to freeze as much as I used to because I would forget about things and have to throw them out when cleaning out the freezer and couldn't recognize anything. :# I will probably need cataract…

Awww... cute fish Bisky! Hi, Nanc! :) Spring, I think I looked at that recipe when I was trying to figure out what to do. Now that I remembered using a whole jar of enchilada sauce it was not dry at all that time. I'm with you though... sometimes corn tortillas are just irritating. I did find 12 seconds in the microwave…

Nanc, so glad to see you back! Hope things settle down for you and all is well. Bisky, love those cards! Yes mostly over the bronchitis. Just an occasional cough. I ended up staying home yesterday and took a long nap before visiting with family. I kind of overdid it on the morning chores and wore myself out, and figured I…

I finally made the mexican casserole/lasagna last night. It was good but not quite lasagna like. Too dry. I now recall that last time, I poured a whole jar of enchilada sauce over top before baking so the sauciness permeated the whole thing. I will try it again soon, and find a good recipe for homemade enchilada sauce to…

Spring, I remember now you had a a big chore to tackle all the brush. I had fun last night. Stayed about an hour. Think I'm pretty well over the bronchitis just an occasional cough. Got up and hit the treadmill. Needed to get back at that now that I'm feeling better. Going to relax over a cup of tea or two, have an ezekiel…

Cool on the Good Foods dips, Coffee. I get them at Fresh Thyme as well. That's my favorite store these days. Small enough to run in and out for a few things and great produce so I stop once or twice a week to stay stocked on fresh veggies. I drink a lot of la croix and Fresh Thyme has it cheaper than Kroger. I only have to…

Spring, I'm pretty good at throwing things together and often get inspiration from recipes with meat or dairy and sub ingredients. Even with a lot of vegan recipes I have to do that if they use vegan butters, oil, packaged vegan cheese, etc. Not that I never eat that type of thing but I try to avoid for the most part. I…

I have a moosewood cookbook too. It's vegetarian not vegan but I should dust it off and see what is in there. Been years since I looked at it. Coffee, that is awesome news! Very encouraging. Your menu sounds great too. Had a busy and kind of frustrating day. Having sweet potato and steamed kale and broccoli for dinner then…

Your menu sounds great today, Coffee. I got one of those granite stone pans a while back and really like it. I still haven't tried a chickpea flour omelet. Need to do that one of these days. How are you feeling? Bisky, looks like you are having a nice visit. Is that your sister's home? Beautiful views! So now I have a…

Coffee, so glad to hear all went well! Been thinking of you. I have read a number of stories over the years from people who reversed liver issues with a WFPB diet. Sounds like you are off to a good start with stocking up on groceries. Will be interested to hear what they say at your follow up appointment. I wonder if it…

Been a busy day although it doesn't feel like I accomplished much. Got the house straightened up before the internet tech got here. He spent about an hour checking lines and testing, then hooked up yet another new router (I had just exchanged it earlier this week for a new one) but it's a different type of router and so…

I didn't make the sauteed onion and zucchini last night but the client also brought eggplant and it just dawned on me that I have everything for ratatouille so I'm going to make that today. Internet is still wonky so they are sending a tech out today. Hopefully they can get it working properly. Also good motivation to…
