I go to the gym before work so when I get in I have "mexican" cauliflower rice mixed with shredded chicken for my snack.

I always use my Blendtec to rice my cauliflower. Just pulse it a few times and it's good to go. Definitely not mush and so easy.

Whole foods sells them. They keep them in a freezer by the meat counter.

Since you're probably busy with the new baby, meal prepping is the way to go. It's much easier to stay on track when you have prepared things in the fridge ready to go.

I am definitely a volume eater. Usually about 90% of my meals are vegetables...and a lot of them. I have never counted calories and never needed to because of this.

Use a meat thermometer. Take it off when it hits 165 and let it rest a couple of minutes.

Try roasting a variety of different vegetables (brussel sprouts, zucchini, red peppers, yellow squash, cauliflower, broccoli...) and see what you like. I definitely eat more than that. I am a volume eater and eat a lot of vegetables (about 80-90% of my plate) (no fruit) with every meal and snack. I get bloated by the end of the day, but back to flat by morning.
