I make these all the time with different meats (pulled pork, fajita meat...) and almond cheese using the mini peppers. They are so good!

I do the same except the calorie part, I don't count calories.

I love roasted vegetables. Just cut them up, season with salt and pepper, toss with olive oil. Bake at 425 for about 20 minutes (or until they are a dark golden brown) turning them half way through.

I was recently diagnosed with Hashimoto's also and was told to stay away from gluten from my endocrinologist and prescribed Synthroid but not supplements. The transition to gluten free was easy for me as I don't eat grains or wheat. Take a look at this http://www.healthline.com/health/allergies/gluten-food-list#WhattoEat4…

I make roasted vegetables (zucchini, cauliflower, red pepper, yellow squash and asparagus) stir in some spinach, put in in a pyrex and add egg whites. Top that with chicken verde and salsa.

I love food too and have been eating SB for years very easily. I think it sounds harder than it actually is. Check out Kalyn's Kitchen, she has many good recipes for every phase. For the most part you can just take any recipe and eliminate the grains, sugar, fruit and certain vegetables. The majority of my plates consist…

I just started smoking pork tenderloin. I thought it would be too lean for the smoker...I was so wrong. It is one of my favorites now!

I eat the same breakfast and lunch and never get tired of them. I have eaten them for a couple of years. Breakfast is roasted vegetable egg white casserole topped with chicken verde and salsa. Lunch is a spicy chicken and vegetable Mexican soup.

Check out www.kalynskitchen.com. She has many SB great recipes.

Lately I've been using just umeboshi vinegar with a little olive oil.

This is one of my favorites: http://www.skinnytaste.com/carne-guisada-latin-beef-stew/ I've been on a pressure cooker kick lately so if you use a pressure cooker, I have many great ones to share.

Lately I've just been using umeboshi vinegar with a touch of olive oil...so good!

This. Except I don't calorie count and the prep is only for me...most of the time. 80% of the time I eat differently than my husband and son so I meal prep for me and cook daily for them.

I was recently diagnosed also and was told not to eat RAW carciferous vegetables. As long as you cook them, they're fine to eat. I also read about strawberries and asked my doctor and she said that it's fine to continue to eat them. I don't know if you are on medication but I am currently on Synthroid and a lot of dietary…

Definitely check out skinnytaste.com. Everything that I have tried from there has been great.

Yes, I use them all the time.

I found that staying away from it completely for a couple of weeks made the cravings subside. I no longer want sugary things at all and haven't had any food with added sugar for years. Contrary to popular demand on this site, it did has not made be binge.

Yes, plus a dessert.

I love these. http://detoxinista.com/2014/07/the-healthiest-cookies-ever-paleo-vegan/ I do make them without the chocolate (just because I don't love chocolate). They are not low in calories but they're very nutritious. I individually wrap and freeze them.

Thanks!

I also check the temperature and make sure it doesn't go over 165.

I love Arizona Dreaming and all of Penzey's spices that I have tried.

I don't like canned tuna but I put umeboshi vinegar, olive oil and salt and pepper with broccoli slaw and cut up roasted chicken and it's great.
