It all depends on how long you cook them. I don't care too much for them mushy so I saute them very briefly (if at all) and mix it with whatever I am having.

I never thought of using chia seeds to thicken gravy. What a great idea!

You're not going to get much help here if it varies from CICO. Join the Paleo group, you'll get a lot more help.

I love these. They're healthy but not low in calories. http://detoxinista.com/2014/07/the-healthiest-cookies-ever-paleo-vegan/

My favorite new snack is sriracha roasted fava beans....so good!

That's great! I've been doing this for my breakfast and lunches for awhile now and, since my son and husband eat very differently than me, I just started doing it for my dinners. Makes dinner time much less chaotic!

Queenmunchy, You seem to have the whole food prep process down pat. Do you have a blog? If not, you should!! :)

I slice mini peppers in half, bake them at 350 for a few minutes then fill them with some sort of meat (I've tried pulled pork, chipotle pork and turkey picadillo). Top with cheese (I don't eat diary so I use almond cheese). Bake until cheese is melted. Then add whatever you like on top (cilantro, pickled jalapeno...)…

Enlightened roasted fava beans and roasted vegetables.

I do the same. I also freeze a lot of my meals so, if I get bored of eating the same thing, I have options.

Roast them at a high temperature. You can add any spice you like, I usually just use salt and pepper.

Agree 100%

I never liked vegetables...now 75% of my daily food is vegetables. What got me to love them at first was roasting a mix of vegetables (cauliflower, zucchini, yellow squash, asparagus, red peppers...). It changed my whole view on vegetables.

I pretty much eat the same as you. What type of recipes (breakfast, lunch, dinner, dessert)? Do you like spicy food?

My house looks like an Entenmann's shop, as my husband eats A LOT of junk food. He will sit on the couch next to me with not one but the whole box of donuts on his lap. I, on the other hand, have not eaten grains or sugar in years and it doesn't bother me at all. In fact, watching it turns my stomach. I know how good I…

I try many things due only to their nutritional value but if I don't like it, I don't eat it.

If you have a dehydrator, just slice them very thin (I use a mandoline), spray or brush with olive oil, season and put them in until they become crisp. If you don't have a dehydrator, do the same except bake them at 225 for about two hours, flipping them half way through.

All that Matt Lauer proved is that it doesn't work for him...

You should try another brand or make it yourself. I make my own in a food processor and its amazing. I prefer it over peanut butter.
