We had Veggie Lasagna last night too - used zucchini strips like that to cut down on the amout of pasta we used (2 layers of pasta and 2 layers of zucchini). Veggie Lasagna! YUM!!! I use a red sauce instead of the more traditional white sauce for my veggie lasagna and this time we subbed sliced summer squash (zucchini and crookneck squash) for two of the pasta layers - when I put it in my recipe calculator it was only 269 calories for 1/8 of a 10 X 13 pan!!!

I made some baby food for my son with sweet potatoes, carrots, and some sweet curry powder (it has cinnamon, nutmeg, cardamon, coriander, cumin, & fenugreek). Just cook the potatoes and carrots, put it all in the food processor until smooth. It is so yummy!! I may make something similar for myself - LOL!!

I'll probably get yelled at, but I just estimate. I guess and try to over-estimate rather than under-estimate. It's one meal - if you're doing well the rest of the time it's not going to make that much difference in the long run. JMO

I usually don't comment unless it looks like they skipped a meal or something. Then I might ask if they're ok - sometimes they've had a rough day and appreciate someone checking on them. Otherwise I just don't leave a comment.

I'm 5'4" - Started at 255 two weeks ago - currently 247. My current goal is 180 - that is what I weighed after 4 months of backpacking on the Appalachian Trail - I wear a size 12 at that weight! Once I get there I shall see - probably aim for between 160 and 170 - I've been 150 and I looked sick!
