Definitely count it. It's pure fat so the calories count up very quickly. If you figure some of it will be left in the pan, then record maybe 75% of what you use.

Drinking water is just another habit which you can choose to take on. You probably shower every day and brush your teeth twice a day, but wouldn't think twice about it. Each time you drink water just keep in mind what it is actually doing for you and how great it is for your body, mind and soul.

If you're getting hungry your deficit was probably too great to begin with. Set an achievable goal and then reduce it slowly as the weeks go by and your body gets used to not overeating like you (presumably) used to.

Anything that excludes anything that is not a poison is too restrictive for me ;) ... It's just not necessary. Following macros, eating at least 80-90% whole foods (including lots of vegetables, fruit and water) and following a sensible exercise program will never sell a book though.

I try to avoid fast food for this very reason; it's so calorically dense. I can easily eat 1500-2000 calories and be hungry 4-5 hours later. It's always worth logging everything, if you want consistent, predictable results. Record everything, even if you know it will be inaccurate. If you were to eat 'unknown' foods every day it could be a problem but this should be fine. Just try your best.

If 11st3 is 157 lb then that's very light for a 5'11 man IMO, but then it depends how much muscle you have/want.

The old 'rule of thumb' is you will consistently lose about 1 lb/week if you reduce your daily intake by 500 calories. Personally I wouldn't recommend reducing by more than this unless you are experienced and know what you're doing.
