Eat it if you want. For me, I would crash by 10 am and need a snack if I had it for breakfast. It's just not enough protein and fiber for me. Then again, I did have a bowl of refried beans for breakfast today. I'm probably not the "norm" as far a breakfast foods go.

A deficit is a deficit. I think all the variables aside, it is easy to tell when you are in a deficit. To me, saying I want to lose 1 lb per week is just an arbitrary race we put ourselves up to. This doesn't have to be a race.

I can easily gain 3-4 lbs in water weight when I have even slightly sore legs from a long run or lifting. How are your clothes fitting? Maybe try measurements instead of obsessing over the scale.

I found the Jillian DVDs very hard on my knees. Do you have mats at your house? If not, I'd recommend getting some.

If the scale isn't moving, you probably don't have a deficit. Are you weighing all your food with a scale? If there are gram measurements on the label, always use those. How are you calculating your exercise calories burned? If you are just logging them here, you are likely over estimating.

On the rare occasion I choose a salad, I want it to be somewhat different, and I want to feel like I'm not being royally ripped off. Ceasar Salad doesn't meet those criteria for me. I always have lettuce, a bottle of Ceasar dressing, and chicken in my fridge.
