It's not only counting her "active" calories. Fitbits' calorie indicators include the calories you burn just living in addition to any exercise calories. It tries to give you a picture of how much you burned in total throughout the entire day so you can plan meals etc accordingly

If the goal is to lose weight there's no need to go cold turkey on anything, unless it's a food type you seriously can't control your intake of. But it's not a good idea to demonize sugar/carbs/fast food as pure junk. It all can be fit into a diet that allows you to continue to enjoy food you like while losing weight.

As you gain weight your caloric needs increase if you want to keep gaining. Just like as you lose weight, your needs decrease if you want to keep losing.

MFP is designed for you to eat them back. The problem is that your calorie burn is an estimate - it could be higher or lower than what is being reported. Many people start by eating back half of the calories you burn and seeing how that goes.

Increased heart rate is a result of cardio exercise.. But it's the exercise that burns the calories, not just sitting there with an increased heart rate.

Anything is better than nothing so go for it, but it won't be the same effectiveness as actual jogging/running. 355 calories for 30 min seems like the fitbit is assuming you're jogging normally rather than in-place.

The absolute best thing you can do right now is eat normal food and learn portion control. Unless you plan to drink shakes for the rest of your life, or you want to have to go on a diet every time you need to fit into something or have an event coming up.
