Sometimes when you are doing an intense exercise and don't give yourself time to cool down your blood pressure can drop too quickly causing the light-headedness and dizziness.

I'm not sure why your doctor feels your weight loss needs to be so aggressive. That's over a 10 lb a month loss. If you set your goals for maybe 1.5 or even 1 lb a week loss maybe it would be easier and keep you from having as many cravings and you would still be making progress.

What kind of machine are you using to measure body fat? Many of them are wholly inaccurate and mostly measure level of hydration in the body. Are you also taking measurements with a measuring tape? What kind of exercise, if any, are you doing?

A calorie deficit will make you leaner. You will build some strength with rock climbing but building muscle (increasing mass) isn't so easy.
