Yes it's fine. I eat at least 2 a day. Getting high cholesterol from eggs is 90's science. You can eat the yolk safely as well. As a matter of fact, it has awesome micronutrients.

Should be good. Quinoa is one of the rare plant sources of complete proteins so it should be good. As far as I could find the puffing doesn't negatively affect the protein quality and it's a great source of micronutrients and complex carbs.
