I do something similar to this. I use frozen bananas, almond milk, almond butter, cocoa powder and raw cocoa nibs. It's amazing and low in calories.

It's actually easier, not healthier, for me when I don't count calories. I lose weight really quickly. I don't focus so much on food and when I don't know that I have surplus calories I don't think I need to eat to hit my calorie goal. I know that sounds weird but it's just so. What is your height and weight and age? Or do you know your TDEE as given by the online calcs? Are you sure that you are only eating 1400. There have been times when I was logging and thought I was at a certain limit but when I went back and looked I was under the limit a few times but mostly over the limit often.

What is your calorie limit? Perhaps it is too low for you. Maybe you can eat a little more and lose at a slower rate. When I feel like eating something crunchy I munch on celery (if I am over my calorie limit and can't fit chips in).

I know people who have diastasis recti from pregnancy and this is what it looks like. That tummy doesn't look fat. The down side of it is that you will have to have an operation to bring them back together again.

When you splurge you probably eat more carbs and salt than you were eating while cutting. This means you gained water weight and also replaced some glycogen in your muscles. When you work out your muscles also retain water to help repair.

How does a scale calculate body fat? I've been wondering this for a while. OP, if your floor is not level any scale will vary your weight depending on your feet position and your balance.

If you do use an item with an asterix by it double check the calories and macros. I have found a few to be wrong.

I'm not sure about that. Yet what I do know is if you eat your ice cream with a fork, half the calories magically fall between the prongs. It's scientifically proven.
