I like cottage cheese as a snack/lunch. My favorite way is to add cherry tomatoes or sliced tomatoes in it, and season it with thyme or rosemary.

If you don't enjoy eating plain old fruits and veggies, don't force it. You will get sick of it quickly, I know I do. You could try "sneaking" in veggies to meals. I babysit VERY picky kiddos. Don't know if this was already said because I didn't want to read through everything but I really like slices of tomatoes with basil in my cottage cheese.

I tend to eat a lot of eggs in a week, and almost always with some kind of bread. Avacado, as mentioned, is a way to add calories to a lot of dishes. I also like pasta and trail mixes.

I stuff my face the week before. I can eat a whole fridge and not feel full. Then when the tide hits I basically hibernate for the week.
