When I have to chose from a long list, I either go by USDA numbers, or chose those that have the most confirmations. It's probably not 100%, but as close as I can get. For oriental foods I use the Rooster Brand Sri Racha sauce and my own home made sauces for anything else. Here in Mexico we make our own hot sauce in five minutes and very few people buy store brand. However I do like Valentina, just wish it was a bit hotter.

Nobody can really tell you, because what works for them, might not work for you. Maybe you can try different plans, log carefully, be aware of how you feel and then decide what works best for you.
