I made radish "potato chips" over the weekend. Fried in lard & sprinkled with sea salt. I served these w/ leftover ribeye I sliced thin & warmed with sauted mushrooms & provolone.

it's good spread on toasts/crackers, topped w/ a spoon of pesto & a slice of proscuitto. I also use it in my mashed potatoes w/ parmesan, garlic, nutmeg.

I do braised beef short ribs. It's nice because I do them a couple days ahead & just reheat. Makes skimming the fat from the sauce easier too. Also, including a rack of lamb this year. I enjoyed Tday, I'm a stuffing freak. I ate what I wanted but practiced moderation. I was right back at low carb the following day & I've had no ill effects from the holiday. We got in exercise as well. I anticipate the same for the next holiday.

That's exactly what I do, but top with the bacon & cheese before baking. I make the creamed peas fresh, the sauce tends to separate when reheated. 400f for 12-14 min.
