I hope not; the idea of a vegetarian in ketosis sounds pretty ridiculous in my opinion. To stay in ketosis you'd have to really limit your fruit/vegetable intake which seems to me like it would defeat the purpose of being a vegetarian. If you plan on eating only vegetables, the amount of them you would need to eat each day…

Fruits, always. Vegetables...it depends. A banana or apple is almost always 100+ calories and ~20g+ carbs which are both pretty significant amounts to ignore. Personally I won't lose sleep over not logging something like celery or cucumbers though but depending on your goals you may want to log more meticulously.

Carrot-apple juice doesn't sound like it'd be very conducive to a keto diet, but as far as the nutrition facts go I'd either record all the fruit/vegetables used or find a similar juice from a reputable establishment that has nutritional info posted online and use that as a guide. That's what I usually do.
