It depends on how much you weigh now, how much you want to lose, the rate you want to lose, your activity level, etc. Some people can lose weight eating 2200 calories a day. You are eating too few calories. Some people can eat 1200 calories a day and feel fine. Obviously you're not one of them and there's nothing wrong with that. Wouldn't you rather eat more and not starve every day? It will take you longer to get to goal weight, but you won't be miserable and setting yourself up for failure…

The real question for you is do you want to waste your time guessing the amount you are eating? If so, you'll probably not be eating enough and consequently not be building any muscle. I'm not going to tell you how to parent - but for my 1 year old and 4 year old bed time is 7pm and 7:30pm. No way would they be staying up until 10pm. So I workout after they both go to bed.

What is your TDEE? If you're not eating above that then you're not gaining any muscle. And you're also not gaining any fat. As long as you're still eating at a deficit, what you are gaining is water weight.
