750 is too high, 231 is too low. biking most accurately measures calories burnt compared to running/walking/ elliptical because it doesn't account into weight difference between people. It's purely leg strength. Burning about 375 kcal seems right for light bike. I usually just go 50% of what mfp recommends. Seems to work.

Yes. Shoulders are not supposed to handle heavy overweight movements such as 'heavy' overhead press. Your shoulder will wear and tear. Keep overhead shoulder movements light if possible.
