I would have definitely grilled them had I had access to a grill. Even lightly. I'd only do this though if you don't plan to have leftovers, otherwise I think they'll get TOO soggy.

Pistachios are high in calories, but i'd keep them and ditch the dressing, or make sure you're using just a tbsp to drizzle it on. I generally keep my salads with as many veggies as possible, no dressing, no meat, some fruit, and a bit of nuts. They add calories quickly.

I don't usually track fat, but I think that may be a good idea. With gluten-free, I imagine most of my diet will be vegetables and fruit. Which is great, but its easy to digest and doesn't stick with me long. Thank you!
