I don't know about their calories, but as a Mexican I vote bad. Especially when good tacos are literally the easiest thing to make. Tacos are what I make when I'm too lazy to cook.

Find the time. I know single working mothers with toddlers who find the time to exercise. If you want to build strength, and eventually lean muscle, weight lifting is the way to go. Bodyweight exercises are another option if you can't get access to weights.

Most mornings I eat a bagel with smoked salmon and cream cheese, but sometimes I take the bagel out of the equation (OK, I only do this when I run out of bagels, but still) and make smoked salmon rolls filled with cream cheese.
