I live in rural Nevada where grocery selection is spotty, but the local Walmart always seems to have vacuum-packed oxtails in stock. Much as I like slow-cookers, I prefer browning the oxtails and simmering them in a big stockpot on the stovetop with veggies and barley.

For me, accurate tracking and consistent logging are necessary to my weight maintenance, made easier by the fact that I almost always prepare my own food. My current favorite way to cook beets is to peel them, cut them into big chunks, and toss them in a slow cooker with some onion chunks, a little olive oil, and a seasoning blend. No liquid is needed. For me, older has been better for weight loss. Demands of children and work no longer absorb my time and energy, and health concerns add urgency to my efforts. I was 64 when I started losing weight, and I'm now 72, about 75 pounds lighter and feeling much fitter. All the best in reaching your goals!

My mom always made sure I had a water gun full of ammonia when I went hiking in my teens. She often carried a cattle prod on walks. Those precautions seemed silly to me at the time, but the older and more cynical me sees the wisdom in some preparation for danger. Enjoy your walks and stay safe.

I'm also in maintenance with a low calorie allowance. For me, higher fat levels are key to keeping me satiated. Much as I love carb-rich foods, I'd rather cut back a bit on the refined carbs in favor of my beloved butter, olive oil, and cream. The down side is lack of volume, so this wouldn't work for everybody.

That's the smart way, but then there's my way- herbs scattered around my acre of land so I can scurry around once the cooking is underway, colander in hand, hoping the dish doesn't burn before I return with the seasoning.
