Hit the gym. It won't be enough for dinner, but it will limit the damage done for the day. You aren't going to "gain" weight if you go over your calorie goal a little, you just won't lose as much this week. Do better tomorrow.

You burn the same calories every day just living. Meal timing doesn't matter, calories do. If you stick to your calorie goal, you will lose weight, even if you eat all your calories in the evening.

MFP supplies a basic math equation for weight loss, you need to use your own good sense to determine if it's right for you personally. That is why it spits out 1200 when you put in 2lbs per week. Change your goal to lose 1lb per week and I bet that it will be a lot closer to your BMR.

Calories remaining means that is how many you have left to eat to meet your goal for the day. Your calorie deficit is already built into the goal amount, you do not and should not eat under it.

I calculated your maintenance calories and got 1771 per day to maintain. I think you may have calculated your BMR, which is actually what your body would need if you were in a coma to survive, not actually being up and about in normal life. So with zero exercise, your daily deficit could be as much as 571 calories per day.

Just keep at it, the water retention will go away. It is not physically possible for you to have gained 3lbs of fat unless you are lying to yourself about your calorie intake in the last 2 weeks and have eaten 10,500 calories above your maintenance needs.
