Exercise is for fitness, calories are what affect weight. If you aren't 100% accurate in calculating your intake of calories (read: estimating is doing it wrong), you can not be 100% certain you're burning the amount of calories you think you are. I guarantee you're not only estimating on tomatoes.

It sounds more like she's concerned about you doing this ridiculous diet, she's not putting you down. Everyone's asking you completely valid questions like "why not just eat the same amount of calories and learn how to manage your diet/weight?" How about you think on that, instead.

A person can easily get 30lbs overweight by estimating several seemingly innocuous things wrong every day for an extended period of time. It all adds up.

Do something that will both keep you busy and get in the way of eating. Paint your nails. I sure as hell don't want to get crumbs or smudges on a fresh manicure.

You would be correct in your assumption that you may gain some water weight. These posts happen all the time, and all across the board the gains vary wildly from 1lb to 5lbs for some, and others don't gain at all. Just wait until after your TOM to weigh yourself, so you don't stress yourself out unnecessarily.

I weigh sporadically during the week, I only log when I see a substantial loss, which means at this point, only every other week or so.
