My mom makes beef and noodles all the time so I asked her how she makes it but it doesnt sound very healthy. I know this is kinda of time consuming but I make a sauce that my husband loves and I just use whatever tomatoes I have and peel the skin off, dice them up into pieces, cook them for like 30 min, and it turns "Sauceylike" but with some chunks of tomatoes.
