i eat a ton of yellow squash but mostly it is in stir fry... i did hollow them out and put seasoned ground turkey in them and then baked... those were yummy... i topped it with parmesean cheese

barbecue sauce on broccoli... my fave! oh and i take a banana and cut a scoop out (like they use to do to subway sandwiches, so it makes a little boat) and put raspberry jelly in it... freakin delish

I am doing well... have brought my lunch every single day but 1 for the last 30 days... i am hoping to be down 15lbs total by Vday (3 more to go) and 40 total by June1... just now feeling comfortable enough to start incorporating some exercise... now just have to fit it in with this crazy schedule!!!

i make stuffed peppers or stuffed zucchini a lot... just mix with brown rice (or quinoa, etc.) and whatever veggies you want (i usually do onion, pepper and celery) and then stuff and bake... so simple and delicious
