This is really awesome! Sautee the onion and garlic bits in the bottom of the pot before adding rice and stock. If it goes with your dinner, add a tablespoon or two of tomato paste and sautee it for 30 sec-1 min (after garlic/onions are soft and browned). Whisk into broth and add the rice.

Oh - and I make lemon-pepper chicken breasts about every two weeks. It's zesty enough to be flavorful on its own with side dishes, and/or the chicken can be cut up for salads, pasta, fajitas, or chicken salad. Yum!

If you don't go crazy with the spray-oils, the calories are negligible. I suggest spray-canola - it's pretty flavorless, so it won't interfere with other seasonings (like cheese-flavor, southwest flavor, etc). Good luck!

I tend to like mornings better because it takes me a while to wind down and get to sleep after an evening workout. Just the way my quirky body seems to work. :) LOL - on the other hand... I'm writing this at 10:30pm and will be heading to the gym in a moment. Glad tomorrow's a holiday!

I prefer the long-cooking rice too. While 'minute rice' is quick and convenient, it's more processed. When I cook rice, I often cook extra and freeze a couple of portions. That way I have something convenient, clean, and inexpensive at hand when I need it. :)
