    Thanks for posting! I love soups of all kinds and these sound incredible. My go-to book is "12 Months of Monastery Soups." Many healthy options and they turn out beautifully.     I also remember, several restaurants in Ireland served vegetable soups made from a mixture of root vegetables, and pureed until smooth and creamy. They were delicious! I've done that at home a couple times with leftover root veg. Super easy, filling, low calorie, practically impossible to mess up, and bonus for using up odds and ends.

    I've been making red lentil veggie soups with the help of a spiralizer and adding about 1/2 c. of nutritional yeast to a soup made with 2 liters of broth both for flavoring and added nutrition. Works well alone or with cumin, lemon, and other flavorings. My favorite veggies have been spiralized zucchini, shredded carrot, tomatoes, onion, garlic and shredded spinach leaves and or chopped cilantro.
